Kerry’s Macarons – Behind the Business with Kerry Tsang

It seems like you can’t turn around these days without bumping into a new cupcake shop. But while there’s nothing wrong with a nice cupcake, they just don’t have the je ne sais quoi of the traditional French baked treat. Since Canada is one of the only countries outside Europe that enjoys the macaron, it’s fitting that Toronto has developed a love affair with the confection.

We interviewed Kerry Tsang, the owner (and baker) of Kerry’s Macarons and spoke about life as the proprietor of a new bakery in a big city, how she started in the kitchen and the joy of baking.

I love doing business, and I love baking.

Tell us about your business. What do you do and who are your customers?
I bake delicious Macarons everyday! Kerry’s Macarons is a wholesale bakery that specializes in French Macarons. Our target customers are retailers, chain stores, local cafes and teashops. We also do wedding favours and a Macaron tower.

We believe that “quality tells all” and make our Macarons fresh to order with carefully selected ingredients.

What do you offer? Are there any products or services that are particularly important to your business and customers?
Product – We make our macarons fresh to order with very very generous fillings. We offer 14 different flavours including classic flavours like Salted Caramel, Pistachio, and also playful flavours like cotton candy and strawberry & cream. We are always trying to create new and interesting Macaron flavours.

Service – We have received a lot of wedding orders for our Macaron towers. We know that special occasions call for special attention, so we always take our time to communicate with our customers to identify their special needs and wants. Kerry’s Macarons offers a “No cracked-shell” guarantee for our customers.

Business support – We know more about our products than our business partners and we are here to provide them with guidelines on pricing, positioning and marketing strategies. We even create signature Macarons for our clients upon request.

How did you get into the field? Is it a family legacy or are you a pioneer?
I was working in the Finance industry after graduating from Commerce degree, but I always knew I wanted to start my own business since I was a kid.

I loved baking, so starting a bakery was always the dream.

Why do you love what you do? What it is that drives you every day?
Macarons are so cute and trendy and I can get creative with them. I have tasted many Macarons in Toronto and to be honest, there aren’t too many decent Macarons out there. So my goal is the create great tasting Macarons and open up my first retail location in the near future. I have clients who come back to my store every week to get their weekly dose of macarons, and nothing gives me greater satisfaction than that.

Was it all smooth sailing or have you had to overcome adversity to get where you are?
Since I am the sole owner and employee, I wear all of the hats of business, production, marketing, bookkeeping, delivery, client meetings, store keeping, etc. I barely have time to sleep, I wish I had the power to clone myself to help me with all the work.

We all know that crazy happens. What’s the wildest thing that’s happened on the job?
The craziest thing is that I purchased an 800 pound machine for my bakery and we had to hire 8 guys to carry it through the window. It was hilarious.

Do you have any advice for aspiring business owners just starting out?
Always keep the end goal in mind.
